Long ago, cattle were actually so numerous in Brazil that meat was virtually free! The primary product sought in the raising of the cattle was leather.

BACANA - A Brasilian Steakhouse or "Churrascaria"

"Churrascaria" restaurants, from Brasil, serve grilled meats and other foods in "rodizio" or rotation until the customer says, "Stop!". These Brasilian restaurants and their unique style of cutting grilled meats to the customers' plates are becoming popular throughout the world and spreading rapidly across the US.

The restaurants take their name from the "Churrasco" style of grilling that was common among the "gauchos" (cowboys) of the Brasilian cattle ranches. The gauchos typically cut the choicest pieces of beef and grilled them over an open fire on skewers. The meat servers, "Churrasqueiros", in Bacana wear pants, belts and hats that are modeled on the clothes of the gauchos as well.
